The best of both worlds - the chewiness of oatmeal cookies with rich brownie flavor.
Ingredients
2/3 cup whole wheat flour
1/3 cup sugar
1 cup quick cooking rolled oats
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt (optional)
1 1/2 teaspoons powdered egg substitute mixed with 3 tablespoons water
1/3 cup light corn syrup (or honey)
1 teaspoon vanilla
Instructions
1. Preheat oven to 350°F.
2. Mix egg replacer, vanilla, and syrup in a small bowl.
3. In separate bowl, combine all dry ingredients.
4. Make a well in dry ingredients and add liquid.
5. Stir until moistened.
6. Drop by spoonfuls onto sprayed baking sheet to form about 24 cookies.
7. Bake about 10 minutes.
8. Cool on sheet for 5 minutes, then transfer to wire rack.
