I wrote that ice cream article for Fast and Healthy and
consequently have tested the ice cream recipe Ann sent to you. So
someone has tested it from this list. (g) Anyway, I also tested that
same recipe using soymilk for a vegan ice cream and it is equally
wonderful. I can't recall the brand of the soymilk I used but it was a
"lite" variety and the numbers came up about the same. My absolute
favorite summer frozen treat is really simple: mix 1 quart nonfat
strawberry yogurt with 1 pint finely chopped strawberries, 1 tsp
vanilla, and about 1/4 cup sugar. (You need the extra sugar because
frozen foods taste less sweet than when they are at room temp.) Put in
an ice cream maker and process according to manufacturer's
directions. A delicious and easy summer treat.
