Hearty multi-bean soup that freezes beautifully. Try to include adzuki and anasazi beans!
Ingredients
4 cups dried beans (as many types as possible, including adzuki and anasazi)
1 teaspoon fresh grated ginger
2-3 large onions, chopped
1 teaspoon lemon pepper
3 tablespoons BBQ sauce
3 teaspoons chopped green chili
3 cloves garlic, chopped
1 (28 oz) can crushed tomatoes
1 (16 oz) can crushed tomatoes
1 1/2 teaspoons chili powder
6 tablespoons ketchup
6 stalks celery, chopped
18 cups cold water
Instructions
1. Wash and pick over beans. Soak in water to cover by 2 inches overnight.
2. In morning, drain and rinse beans. Return to pot with 18 cups cold water and ginger.
3. Bring to full boil, reduce to active simmer, and cook until tender (1.5-2 hours).
4. Add remaining ingredients.
5. Bring to boil, lower heat, and simmer 3 more hours.
6. Stir and add water as needed. Freezes well!
