Chunky vegetable stew with barley. Great with crusty bread and makes wonderful leftovers!
Ingredients
1 cup barley
1 large onion, chopped
2 cloves garlic, chopped
4 slices fresh ginger
2 cans whole tomatoes, peeled and cut into chunks
2 carrots, chopped
1 small can kidney beans
1 teaspoon curry powder (optional)
4 stalks celery, cut into small pieces
2-3 potatoes, peeled and chopped
5 cups water
Instructions
1. Place barley in large microwave-safe bowl. Add water, cover with plastic wrap, and microwave on full power for 20 minutes. May need 10 more minutes until barley is cooked.
2. Sauté onion, garlic, ginger, and curry in nonstick pan.
3. Add remaining vegetables. Bring to a boil, then reduce to a simmer.
4. Simmer 30-45 minutes until potatoes and carrots are cooked. Add more water if needed.
5. Serve with hot bread.
Variations: Add corn, peas, or omit potatoes.
