The simplest version of Japanese dashi - just kombu simmered in water. A clean, delicate base for miso soup and other Japanese dishes.
Ingredients
6 cups water
6 inches kombu (dried kelp)
Instructions
1. Add kombu to 6 cups water in a pot.
2. Simmer uncovered for 30 minutes.
3. Remove kombu and use stock immediately or store.
