Adzuki Bean Salad

A unique salad featuring adzuki beans with Asian-inspired flavors. Rich in protein and antioxidants.

Ingredients

2 cups cooked adzuki beans (or 1 can, rinsed and drained) 1 cup cucumber, diced 1/2 cup red bell pepper, diced 1/4 cup green onions, sliced 2 tablespoons rice vinegar 1 tablespoon low-sodium soy sauce 1 teaspoon sesame oil (optional) 1/2 teaspoon fresh ginger, minced 1 clove garlic, minced Fresh cilantro for garnish

Instructions

1. In a large bowl, combine adzuki beans, cucumber, bell pepper, and green onions. 2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil (if using), ginger, and garlic. 3. Pour dressing over bean mixture and toss gently. 4. Refrigerate for 30 minutes to let flavors meld. 5. Garnish with fresh cilantro before serving.
