A quick and nutritious warm salad with couscous, lentils, and tarragon.
Ingredients
4 cups prepared couscous
2 cups cooked lentils
1/2 cup red onion, diced
1/2 cup red pepper, diced
2 tablespoons dried tarragon
1 tablespoon cracked black pepper
2 tablespoons red wine vinegar
6 lettuce leaves
Instructions
1. Combine all ingredients except lettuce in large bowl.
2. Heat in saucepan for about 5 minutes.
3. Serve warm on lettuce leaves.
Great served with whole grain or herb bread!
