Curried Brown Rice Salad

A fragrant rice salad with curry, orange juice, and dried fruits.

Ingredients

1/2 pint water Salt to taste 8 oz long grain brown rice 1 onion, finely chopped 1 teaspoon ground cumin 3 teaspoons curry powder 3 fl oz orange juice 3 oz dried apricots, chopped 2 oz raisins or sultanas Pepper to taste

Instructions

1. Bring water and salt to boil. 2. Add rice, cover, and simmer 40 minutes until water is absorbed and rice is tender. 3. Cook onion in small amount of broth or spray until softened, about 3-4 minutes. 4. Add cumin and curry powder, cook 2 more minutes. 5. Pour in orange juice and simmer 1 minute. 6. Remove from heat. 7. Place rice in large bowl and stir in the warm sauce. 8. Add apricots and raisins. 9. Season with salt and pepper. 10. Cover and let stand 2 hours for flavors to develop.
