Spicy Tex-Mex potato salad with picante sauce and lime. Great hot weather salad!
Ingredients
1 lb potatoes, cut up (new potatoes work great)
1/4 cup water
1/4 cup picante sauce
2 tablespoons lime juice
1/8 teaspoon pepper
1 large tomato, chopped
1/4 cup green onions, chopped
Instructions
1. Place potatoes and water in microwave-safe dish. Cover.
2. Microwave at 100% power for 9-11 minutes. Drain.
3. Combine picante sauce, lime juice, and pepper. Microwave uncovered 45-60 seconds until heated.
4. Stir into potatoes along with tomato and green onions.
5. Serve warm or chilled.
