A hearty grain salad with barley, vegetables, and savory seitan.
Ingredients
4 cups cooked barley
1/2 cup onions, diced
1/2 cup carrots, diced
1/2 cup celery, diced
1/4 cup shiitake mushrooms, soaked, diced, and cooked
1/4 cup chopped parsley
1/2 cup cooked seitan, cubed
Tamari-ginger dressing
Instructions
1. Bring 1/2 inch of water to boil.
2. Blanch onions for several seconds, remove and drain.
3. Blanch carrots for several seconds, remove and drain.
4. Cook shiitake mushrooms in a little tamari and water for 10 minutes.
5. Combine barley, onions, carrots, celery, shiitake, parsley, and seitan in mixing bowl.
6. Mix thoroughly.
7. Serve with tamari-ginger dressing drizzled over each serving.
Note: Other grains may be substituted for barley.
