Blue Potato Honey Mustard Salad

Beautiful salad with blue potatoes and sautéed peppers. Got 'keeper recipe' reviews from all tasters!

Ingredients

3 pounds blue potatoes, quartered then halved 1 green bell pepper, diced 1 red bell pepper, diced 1/2 large red onion, diced 1/2 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon black pepper 1/3 cup honey 1/3 cup yellow mustard 1 tablespoon cider vinegar 2 tablespoons water (for sauté) 1 tablespoon balsamic vinegar (for sauté)

Instructions

1. Quarter potatoes lengthwise, then halve the quarters. Boil for approximately 15 minutes. 2. Drain and return pan to stove to dry potatoes. 3. While potatoes cook, sauté onions and peppers in water and balsamic until tender. 4. Combine honey, mustard, cider vinegar, and spices. Mix thoroughly. 5. Mix potatoes, sautéed veggies, and dressing together. 6. Serve hot or chill for a summer salad.
