A flavorful Cajun-spiced vegetarian chili from Parade Magazine with colorful bell peppers and thyme.
Ingredients
2 tablespoons vegetable broth for sautéing
1 large onion, diced (1/4-inch)
1 green bell pepper, diced (1/4-inch)
1 red bell pepper, diced (1/4-inch)
1 tablespoon garlic, minced
2 1/2 tablespoons chili powder
1 tablespoon ground cumin
1 can (28 oz) peeled plum tomatoes, lightly crushed with juices
2 teaspoons dried thyme
Instructions
1. Heat sautéing liquid in a large pot over medium heat.
2. Add onion and bell peppers, sauté until softened.
3. Add garlic and cook 1 minute.
4. Stir in chili powder and cumin, cook 2 minutes.
5. Add crushed tomatoes with juices and thyme.
6. Simmer for 20-30 minutes until flavors meld.
