Carob Brownies with Tofu Icing

Healthy brownies made with carob powder and applesauce, topped with a creamy tofu-based icing.
Ingredients
For Brownies:
2 cups flour (mix of whole wheat and unbleached white)
1/3 cup carob powder
2 teaspoons baking powder
1/3 cup honey
1/2 cup unsweetened applesauce
1 cup fruit juice
1 teaspoon vanilla
For Icing:
8-10 oz tofu (medium consistency)
2 tablespoons brandy or 3/4 teaspoon imitation brandy flavor
4-5 tablespoons carob powder
1/4 cup honey
Instructions
1. Preheat oven to 350°F.
2. Mix dry ingredients (flour, carob, baking powder) in a bowl.
3. Mix wet ingredients (honey, applesauce, fruit juice, vanilla) in another bowl.
4. Add dry to wet and mix well.
5. Bake for 35 minutes.
6. For icing: blend all icing ingredients in food processor until smooth, about 5 minutes.
7. When brownies are somewhat cool, spread icing on top.
8. Don't wait too long to ice as topping thickens.
