An intense, flavorful vegetable stock from Dr. Ornish's Eat More, Weigh Less. Perfect for recipes or sautéing.
Ingredients
2 yellow onions, quartered
1 red onion, quartered
5 carrots, cut in chunks
3 leeks, cut in chunks
3 stalks celery, cut in chunks
1 garlic clove, peeled and halved
1 bay leaf
2 quarts water
Instructions
1. Preheat oven to 450°F.
2. Put vegetables and bay leaf in a heavy baking pan.
3. Roast uncovered, stirring occasionally, for about 1 hour (do not let them burn).
4. Transfer to a stockpot and cover with 2 quarts water.
5. Bring to a boil and simmer, covered, for 1 hour.
6. Strain and cool to room temperature.
7. Refrigerate for up to 4 days or freeze for up to one week.
8. Freeze in 1-cup containers or ice cube trays for convenience.
