Garbanzo Bean Garden Salad

A protein-packed salad with chickpeas and fresh garden vegetables in a light herb vinaigrette.

Ingredients

2 cans (15 oz each) garbanzo beans (chickpeas), rinsed and drained 1 cup cucumber, diced 1 cup cherry tomatoes, halved 1/2 cup celery, diced 1/4 cup red onion, finely diced 2 tablespoons fresh parsley, chopped 2 tablespoons fresh dill, chopped 3 tablespoons lemon juice 1 tablespoon red wine vinegar 1/2 teaspoon garlic powder Salt and pepper to taste

Instructions

1. Combine chickpeas, cucumber, tomatoes, celery, onion, parsley, and dill in a large bowl. 2. Whisk together lemon juice, vinegar, garlic powder, salt, and pepper. 3. Pour dressing over salad and toss well. 4. Refrigerate for at least 30 minutes before serving. 5. Taste and adjust seasonings as needed.
