Classic American potato salad made healthy with fat-free sour cream and mayo.
Ingredients
9 cups cubed unpeeled round red potatoes (about 3 lbs)
1/2 cup diced onion
1/2 cup diced celery
1/4 cup sweet or dill pickle relish
3 hard-cooked egg whites
1 clove garlic, minced
3/4 cup fat-free sour cream
1/3 cup fat-free mayonnaise
2 tablespoons chopped fresh parsley
1 teaspoon dry mustard
3/4 teaspoon salt
1/4 teaspoon pepper
Instructions
1. Place potatoes in large pot, cover with water, and bring to boil.
2. Cook about 8 minutes or until tender. Drain.
3. Place in bowl with onion, celery, relish, and chopped egg whites. Toss gently.
4. Combine sour cream, mayonnaise, parsley, mustard, salt, and pepper. Stir well.
5. Pour over potato mixture and toss to coat.
6. Cover and chill before serving.
