Simple Asparagus Soup

Hearty asparagus and potato soup with fresh dill. Perfect for 99-cent-per-pound asparagus!

Ingredients

2 lbs asparagus, trimmed and cut into pieces 2 large potatoes, peeled and cubed 2 tablespoons fresh dill 1/4 cup unbleached flour 4 cups vegetable broth Salt and pepper to taste

Instructions

1. Simmer asparagus and potatoes in broth until tender, about 20 minutes. 2. Puree half of the soup in blender. 3. Return to pot with remaining chunky soup. 4. Whisk flour with a bit of cold water to make slurry. 5. Stir slurry into soup to thicken. 6. Add dill, salt, and pepper. 7. Simmer 10 more minutes until thickened.
