Ingredients
4 cups sweet potato cubes, peeled
1 apple with skin, chopped
2 stalks celery, sliced
1 small red onion, chopped
1 teaspoon fresh ginger, grated
Seasoned rice vinegar to taste
Instructions
1. Steam sweet potato cubes until soft but not mushy.
2. Let cool slightly.
3. Combine sweet potatoes, apple, celery, onion, and ginger.
4. Toss lightly with rice vinegar to taste.
5. Serve warm or chilled.
