Simple summer salad using fresh garden tomatoes. A new way to use up an abundance of tomatoes!
Ingredients
2 cold baked potatoes, diced
3 fresh tomatoes, diced
1 teaspoon dried basil
1 small red onion, diced (about 1/2 cup)
1/2 red bell pepper, diced
1 tablespoon rice wine vinegar
1 teaspoon sugar
Instructions
1. Combine all ingredients in a large bowl.
2. Mix well.
3. Chill before serving.
