Bean and Apple Casserole

A unique combination of white beans with apples, cinnamon, and a touch of sweetness.

Ingredients

1 cup Great Northern or butter beans, soaked overnight 2 firm eating apples, peeled, cored and quartered 1/2 tablespoon brown sugar 1/2 teaspoon cinnamon 1 tablespoon red wine vinegar Salt to taste

Instructions

1. Cook beans in unsalted water until tender, about 1 to 1 1/2 hours. Drain, reserving liquid. 2. Preheat oven to 350°F. 3. Stir apples, sugar, cinnamon, vinegar, and salt into beans. 4. Transfer to ovenproof dish. 5. Add just enough reserved liquid to barely cover. 6. Cover with lid or foil. 7. Bake 35-40 minutes until apples are tender.
