Quick polenta with sun-dried tomatoes and garlic. Serve immediately or grill later!
Ingredients
1 1/2 cups polenta
4 1/2 cups vegetable chicken-style broth
5 pieces sun-dried tomatoes, soaked and sliced julienne
2 cloves garlic, minced
Instructions
1. Cook polenta in broth, stirring frequently, until thick.
2. Stir in sun-dried tomatoes and garlic.
3. Serve immediately as soft polenta.
OR
4. Pour into cookie sheet or large casserole.
5. Chill until firm.
6. Cut into squares.
7. Warm in microwave or grill before serving.
