A multi-day project for the crunchiest, most flavorful chickpea snacks!
Ingredients
Seasoning Mix:
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon dry mustard
1 teaspoon turmeric
3/4 teaspoon white pepper
1/2 teaspoon black pepper
1/2 teaspoon cayenne
1 packet artificial sweetener
Other:
1/2 pound dried chickpeas
5 cups water
1 cup apple juice
1 cup vegetable stock
Instructions
Day 1:
1. Combine all seasoning mix ingredients. Set aside 1 tablespoon mixed with sweetener.
2. Place chickpeas in water with remaining seasoning mix.
3. Soak overnight in refrigerator.
Day 2:
1. Place chickpeas with soaking water in pot over high heat.
2. Add apple juice and cook 20 minutes.
3. Add vegetable stock and cook 40 minutes until just tender.
4. Drain, rinse well, and drain again.
5. Sprinkle with reserved sweetened seasoning.
Drying:
1. Spread evenly on trays.
2. Dehydrate at 150°F for 20-22 hours until dry and crunchy.
3. Turn and rotate pans every few hours for even drying.
4. Store in airtight container.
